I am a displaced Southerner and love my biscuits and gravy. When I received my Tovala, I just had to try making my biscuits in it. After several trials, with my usual recipe I arrived at a good program for the little oven. My recipe is:
2 cups all-purpose flour 1 tablespoon baking powder 1 teaspoon salt 3 tablespoons shortening 2/3 plus 1 tablespoon buttermilk (can substitute milk)
Preheat the Tovala to 450 degrees. Mix the first three ingredients and cut the shortening into the mix until the bits of shortening are quite small. Stir in the buttermilk and gently mix until uniform. Place the dough on a floured board and gently spread until it is about 1/2 inch thick. Cut the biscuits to shape. This can be using a round cutter for traditional shapes or simply cutting into squares. Place the biscuits in a baking sheet barely touching. Being close will make them rise higher. Then bake using the following program:
450 steam for 5:00 400 bake for 5:00 350 bake for 5:00
